I have a 2015 POP and I noticed that when stopped that the A/C isn't as cool as it was on my 2013 but just as cool when moving, could be because they're using the new type Freon R1234yf and not R134a.
You better hope that the shop noticed that the new 500's are using the new freon and didn't fill the A/C with R134a...

Yeah they tried to tell me that was the reason as well and I went straight to the manager of the dealership and told him to give me the keys to a new sport on the lot, told him to come with me had him start the car and turn the a/c on... Instantly cold and stayed that way, so I know that is not answer.. Mine doesn't just blow as cold air it blows hot humid air

At this point it doesn't sound like you have a issue with the A/C but with the controls/Blend doors..I had a Ford Ranger pickup that had a similar problem, turned out to be the blend door actuator servos. Put the A/C to the closed (no outside air) position and see if it improves, I usually keep mine in that position for both heat and A/C unless I'm on a long trip and not in and out of the car.

Recirculate mode usually helps a lot.

my issue is that the car has 2500 miles less than 2 months old ... I shouldn't have to so anything to it but drive it, fresh ones on the lot work just fine, I tested them

Had the same thing happen to my Baja. It turned out that the coolant fans had com unplugged. Plugged them back in and it started working. Not sure you may have the same problem, but it is something to check.

Unfortunately be prepared for more issues. Maybe not as serious but issues none the less.
